How to cook a kenyan pilau?
Here is a recipe for a traditional Kenyan-style Pilau:
Ingredients:
- 2 cups basmati rice
- 1 medium onion, finely chopped
- 3 cups chicken or beef broth
- 1/4 cup vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon cardamom seeds
- 1/2 teaspoon ground turmeric
- 1 cinnamon stick
- 2 bay leaves
- Salt to taste
- 1/2 cup frozen peas (optional)
- 1/2 cup chopped carrots (optional)
- 1/4 cup raisins (optional)
- 1/4 cup cashews (optional)
Instructions:
Rinse the rice in a fine-mesh sieve until the water runs clear.
Heat the oil in a large pot over medium heat. Add the cumin seeds, cardamom seeds, turmeric, cinnamon stick, and bay leaves. Cook until fragrant, about 1 minute.
Add the chopped onion and sauté until softened, about 5 minutes.
Add the broth, salt, and any optional ingredients you are using (peas, carrots, raisins, cashews) and bring to a boil.
Add the rinsed rice to the pot and stir gently. Reduce the heat to low, cover the pot, and simmer for 18-20 minutes or until the rice is tender and the liquid has been absorbed.
Remove from heat and let it sit for 5 minutes
Once done, fluff the rice with a fork and serve.
